Healthy Chocolate Oat Energy Balls


If you're looking for a pick me up snack this summer, look no further. These little balls of joy are jam-packed with goodness AND they're good for you!! Pack a couple in your bag when you're on the run so you'll never be left feeling starved! The picture shows chocolate chips, but I actually use 1 scoop vegan chocolate shakeology these days instead, so I can curb my sweet tooth WITHOUT adding extra sugar (and I get an extra serving of protein/greens/goodness)! Hooray!


Ingredients:

1 cup GF oats

2/3 cup unsweetened coconut

1 scoop chocolate shakeology

(or use 1/2 cup chocolate chips)

1 tsp vanilla extract

1/2 cup flax/chia seeds

1/3 cup honey

1/2 cup natural peanut butter

Sea Salt

How-To:

1) Mix all ingredients together in a container and refrigerate for 15 minutes.

2) Roll into balls and place in clean container with parchment paper between each layer. Refrigerate or freeze for an easy, energy packed snack on the go!!
