Lemon Coconut Snackers

Ok, so I was craving an "after dinner" treat last night #becausesweettooth and since I'm being quite strict for these last two weeks of my Insanity Max 30 journey, I didn't want a bunch of sugar and crap that would make me feel gross and sabotage my results. (Le struggle is so real). Enter these tasty little cookie coins. Lemon Coconut Snackers I'm calling them. Somewhere between an arrowroot cookie and a tea biscuit. Light, crunchy and lemony. They hit the spot and I wasn't left feeling groggy, bloated or soft. You want these in your mouth. I promise.


1 cup GF flour

1 cup shredded coconut

1/2 cup coconut oil

1/2 tsp sea salt

1/2 cup brown sugar

1/2 tsp baking soda

2 eggs

Zest from 1 big lemon

Juice from 1 big lemon HOW-TO:

1) Mix all ingredients in bowl.

2) Preheat oven to 350.

3) Dollop spoonfuls of mixture onto cookie sheet. Bake for 12-15 minutes. 4) They will turn out flat (disc like) and soooo yummy with morning coffee or afternoon tea!!
