Lemon Oat Energy Balls


I love lemons.

I love coconut.

I love oats.

I love dates. (the food and the activity)

I love easy, portable snacks that are healthy.

If you agreed with any of those statements, you're going to LURV this easy peasy lemon squeezy (pun intended) recipe!!

I make this before travelling, on any given Wednesday, or whenever I'm feeling Shark Week hankerings come on and need something sweet to snack on that's not going to bust my sugar intake levels.

Try it out and see for yourself!

This simple recipe might just become a new fave!


INGREDIENTS:

1 cup chopped dates

1 1/3 cup GF oats

3/4 cup shredded coconut

Juice and zest from 1 large lemon

6-10 drops of stevia liquid (depending on sweetness level)

1/2 tsp vanilla

1 tsp coconut oil

4 Tbsp lemon juice

HOW-TO:

1) Put the dates in a food processor and pulse a few times. Add oats and 4 Tbsp lemon juice. Pulse again to mix well.

2) Pour into a mixing bowl and add the rest of the ingredients.

3) Using your hands, mix well and form into 1-inch balls. Place on a cookie sheet and refrigerate.

Makes around 12 balls. Try not eating 4 at once.
