Maple Banana Oat Muffins


Alright you guys, I've seriously outdone myself with these puppies. Not only are they gluten, dairy, flour AND sugar free (honey doesn't count, you psycho), but they TASTE LIKE A FREAKING DREAM and they're so moist and delicious and I want to eat them every single day forever and ever (insert praising hands emoji here). Ok maybe not THAT obsessively, but they're REALLY, REALLY TASTY!!! Don't believe me? Try 'em out yourself!!


INGREDIENTS:

2 bananas

2 eggs

1/3 cup honey

1 tsp maple extract

1 Tbsp Fiber Fix

2 1/2 cups GF Oats

1 1/2 tsp Baking Powder

1/2 tsp Baking Soda

Dash sea salt

3/4 cup almond milk

HOW-TO:

1) Preheat oven to 350 and line muffin tins or grease them with coconut oil.

2) Mash bananas and whisk eggs. Add remaining wet ingredients and then dry. Mix well. 3) Dollop mixture into muffin tins 3/4 full.

4) Bake for 20 minutes. Check with tooth pick. Makes 16 muffins.

5) Try to hold yourself back from eating all of them at once. You're welcome.
