No Bake Dark Chocolate Macaroons


Okay, so picture this: you're sitting on a park bench in the most glorious tropical gardens you've ever seen. There are birds chirping and bambies frolicking around you. Suddenly, a soft, warm blanket is draped over your shoulders and the sun peeks over the tree tops to warm your entire face. You're happy, free and totally blissed out.

And THIS, my friends, is what eating these no bake dark chocolate macaroons is like.

What can I say? I've got a flare for the dramatic... Dramatic like the SILKY SMOOTHNESS OF THE DARK CHOCOLATE IN THESE MACAROONS THAT IS!!! Okay sorry... I'm done now.

Just make these and close your eyes when you're eating them, okay? They're seriously friggin' delicious.


INGREDIENTS:

1 1/2 cups dark chocolate chips

1 cup GF Oats

1 cup Long Shredded Coconut

3/4 cup walnut crumbs

HOW-TO:

1) Melt the dark chocolate in a small sauce pan on low for 5ish minutes.

2) Add the oats, coconut and walnuts and stir in well.

3) Drop Tbsp-sized dollops onto a parchment paper lined cookie sheet.

4) Let chill in the fridge for 15 minutes.

5) Enjoy!

PS - I keep mine in the fridge after the fact so they stay nice and firm!
