Sometimes I get cravings for pumpkin cinnamon things and that's usually when I bake (not often) So the other day I had a wicked hankering for pumpkin muffins and YOU GUYS, these little suckers are delicious, gluten free, dairy free and SUPER moist!! If you have a problem with that word, you can just leave now. ITS A WORD! Ok anyways, here's a recipe. You should try it.
HEALTHY PUMPKIN MUFFINS (GF, DF, yummy AF)
1 1/3 cup GF flour (I use Costco's "cloud9" blend) 1 cup brown sugar 1 tbsp baking soda 4 dashes sea salt 2 tsp cinnamon 1/2 tsp nutmeg 2 eggs 1 small can pumpkin purée (443ml) 1/2 cup coconut oil 1 tsp vanilla 2 tbsp maple syrup
How-To:
1) Mix dry ingredients and wet ingredients in separate bowls.
2) Grease muffin tin with coconut oil and preheat oven to 350.
3) Fill muffin tin spaces to the top. Bake for 20 minutes or until done!
These puppies won't rise much, don't worry.
Makes 12 good size muffins.
