The Best Damn Pancakes


Okay this title is a little bit pretentious... but I PROMISE it is well-deserved. Simple, delicious AND nutritious, these patty cakes will make your Sunday (or Tuesday) EXTRA fun. And if we're being honest, we could all use a little more fun in our lives, amiright?!

We enjoy these every single Sunday and often top them with peanut butter or almond butter and maple syrup. But the beauty of this recipe, is that you can also add walnuts, pumpkin seeds, shredded coconut, chocolate chips - whatever floats your boat - they will STILL be delish.


INGREDIENTS:

1 Cup GF Oats

1 Cup GF Flour*

1/3 Cup coconut sugar

1 tsp baking powder

1/2 tsp baking soda

1 Tbsp Flax Meal**

1/2 tsp cinnamon

dash sea salt 1-2 Tbsp coconut oil

1 egg*** 1 Cup unsweetened almond milk (can add extra 1/2 cup if preferred)

*(I grind oats to make oat flour) **(I grind flax seeds to make this) ***(you can also use 1 Tbsp chia seeds in a bit of water if you're vegan)


HOW TO:

1) Mix wet ingredients (except almond milk) in a bowl. Then add the rest of the ingredients and almond milk.

2) Heat your favourite frying pan and add 1 tbsp of coconut oil so it melts.

3) Add 2 dollops of mixture to make pancakes.

4) Let cook 2-3 minutes each side and serve immediately!
