Ukrainian Borscht


I FEEL SO UKRAINIAN RIGHT NOW!!! Srsly you guys. I just made my FIRST ever batch of borscht, with zero help from my Baba (okay only a little tiny bit of over the phone help, but that basically doesn't count...) And it tastes like my childhood favourite recipe!! Hooray!! The measurements for this recipe are reaaaaally questionable, so I apologize for that!! Just play around and taste as you simmer it!! That's part of the fun anyways! Without further adieu, my very first Ukrainian style BORSCHT!! (Which I'll definitely be remaking and re-measuring!)


INGREDIENTS:

1/2 green cabbage, shredded

5 medium white potatoes, cut into small cubes

3-4 BIG beets, shredded

2 small bags of frozen vegetables (I used the carrot, peas, beans and corn one) But you can also chop carrots, use canned peas and corn if you'd like! 2 cans mixed beans (kidney, white, chickpea, etc.)

1 1/2 large white onions, chopped

1 cup (or more) fresh dill (if no fresh, minced dill is fine too)

2 tsp sea salt

vinegar (add as needed to counteract sweetness. I used around 1/4 cup)

half a pot of water

2 tsp DF margarine or butter HOW-TO:

1) Chop onion and put margarine/butter in BIG pot to melt. Simmer onion for 3-4 minutes, until soft.

2) Fill pot halfway with water

3) Add in all vegetables (carrots, cabbage and potatoes, first)

4) Add vinegar, dill and salt

5) Boil and then simmer for 45-60 minutes. Taste as you go and add as you need!! 6) Eat fresh throughout the week or freeze some like I did for those cold Fall days, when you don't want to make lunch!
