Vegan Alfredo Sauce

Do you ever just crave ALL the carbs?! I honestly get so #hangry in the week leading up to Shark Week (ladies, ya feel me?) that I can be like Ron-un-stoppable when it comes to being satisfied. Srsly though. I don't get mad, I just get hungry. It's the worst. At least if I was getting mad, I would be expelling calories. Anyways... The other night I was CRAVING some rich, creamy pasta. Now you might think that as someone who's allergic to dairy and will DIE from gluten that THAT would be a pipe dream. But au contraire, mon ami!! Gluten free pea penne and vegan garlic alfredo came to the rescue!! Without further adieu (gosh I'm so fancy with my words tonight, aren't I?) here is the recipe for my FAVE alfredo sauce:


1 can coconut milk

1 cup unsweetened almond milk (do not use vanilla) 3/4 cup Daiya mozzarella

1 1/2 Tbsp Italian seasoning mix

3 garlic cloves, minced 1/4 red onion, chopped 2 Tbsp Olive Oil 1/2 orange bell pepper, chopped

1/2 red bell pepper, chopped

1/4 tsp sea salt

1/4 tsp pepper

2 Tbsp cornstarch

HOW-TO: 1) Heat 2 Tbsp olive oil in medium pan on medium high heat.

2) Add in chopped red onion and garlic and let simmer. Cook a couple minutes until fragrant. Add the chopped peppers and cook 2-3 more minutes.

3) Add Italian seasoning, salt and pepper, and stir into mixture. 4) Add in coconut milk, almond milk and Daiya cheese. Reduce heat to medium low and let simmer, stirring frequently. 5) Add in corn starch and continue to stir, 5-10 more minutes.

6) While sauce is simmering, boil water in pot and cook choice of penne pasta Because I'm not some kind of heathen, I also make garlic toast with my pasta (especially when it's spaghetti squash or pea penne as pictured here). To make gluten free, dairy free garlic toast, simply use your favourite gluten free loaf, and in a small bowl mash up dairy free butter spread/margarine, Italian seasoning, garlic powder, sea salt and pepper. Slather mixture onto bread and broil on high for 2-3 minutes.
